INGREDIENTS

1 Jar Curdelicious
Lemon Curd.
1 cup of Evaporated Milk.
1 Teaspoon Clear Gelatin.
1 Graham Cracker Pie Crust.
1/2 pint thick whipping cream.
PREPARATION
In a mixing bowl, add the evaporated milk to the Lemon
Curd and mix it well until a smooth blend is obtained.
Put the Gelatin in a small container, and pour two
tablespoons of hot (not boiling) water over it. Mix
the gelatin well until it is fully dissolved. (Note:
it may seem lumpy at first - keep stirring until all
the lumps of gelatin are dissolved)
Now add the dissolved gelatin solution to the blended
Lemon Curd and evaporated milk, and mix well. (The
gelatin will combine more easily if the mixture is
at room temperature, or even slightly warm. If it is
still cold, place it in the microwave for a few seconds).
Pour the entire mixture into the pie crust, place
it in the refrigerator and leave to set overnight.
Before serving, beat the cream until it is thick,
and then pipe it on to the set pie mixture, or spread
it as you wish.
OPTIONS:
(1) This recipe works just as well with Curdelicious
Lime and Orange Curd.
(2) You can vary the ratio of curd and evaporated milk,
depending on your taste.
